We are going to use two sources for our EJB 2.x examples - one from J2EE 1.4 SDK itself and the other from J2EE 1.4 tutorial.

You can use any appropriate application server to carry out the labs. I'd suggest the SUN Application Server (8.x) for the EJB2.x work. For the EJB 3.0 work you can use JBoss or the SUN Application Server (9.x). You do not have to use an IDE with these systems but it might help, in which case NetBeans is probably the easiest one to use.
